Octoberfest at The Aviator Brewery Saturday 16th

We moved out of the airplane hangar mid-April and are now located in a 10,000sq. ft. building. We have some new tanks on order that should be here mid-July. So look for many new beers to hit the streets soon!

The Anatomy of an IPA
How We Make HogWild India Pale Ale.
We use Pale Ale malt (2-row barley 2-4lovibond), Vienna, and Crystal malts to create a beer that has enough body to support the large hop bill.
As you can probably guess we use all the big “C” hops in the beer. Chinook, Columbus, and Cascade. We also use Amarillo hops. Amarillo is great for bittering becuase of the low cohumulone content. Cohumulone can lend a harsh bitterness most of the time for mid range alpha acid hops.
One other vital ingredient for a big IPA is the water mineral balance. We carefully balance out the magnesium, sulphates, calcium, sodium, carbonates, and chloride to give the beer the full hop effect. Minor additions can make a big difference in the quality taste of the beer. We do a complete inorganic chemical analysis on our water quarterly looking for variations in the make up of the water.
A beer containing this content of hops needs to have the maltiness and alcohol to support the flavor. The alcohol by volume in HogWild IPA is 6.7%.
I think a big sin with IPA’s is to filter the beer. Filtered IPA robs the beer of some flavor. We age our beer and wait for it to clear then keg it. This allows the beer to retain all the hoppy goodness that was carefully installed into the boiling wort.
Note the beer is very light in color for an IPA. We like the combination of the lighter malts and the heavy hoppiness for a refreshing punch in the jaw IPA. Just a good combination in our minds.
